CHIA – THE ANCIENT FOOD OF THE FUTURE

Botanical name: Salvia hispanica

History.
During many centuries the people of Latin and South America Maya, Aztecs, Incas had been using Chia seeds as their main and the most important food together with corn, beans and amaranth. The first mentions about Chia use date back to the year 2600 b. C. Chia seeds were not only the basis of the Aztecs diet, but also part of religious ceremonies very important for the religious and spiritual culture, Chia seeds were sacrificed to the gods of Aztecs. They paid taxes and tributes to Aztec priests and nobles with Chia seeds. Tenochtitlan, the capital of enormous Aztec empire, received annually 15 000 tons of chia as the tribute from the conquered tribes. Aztecs thought, and to our mind correctly, that these seeds gave them huge, almost supernatural powers.
Chia was their Symbol of Life.
The Aztec warriors ate Chia seeds in all their marches and battles, what gave them strength and endurance. Just one spoon of seeds eaten the day before gave them enough strength to make the marches of 24 hours!!! And nobody of them was dehydrated or exhausted physically or mentally and all this happened in the severe conditions of mountain and rather hot climate! By the same way the Indians of tarahumara ("swift-footed") tribe hunted following the animals until the last fell of tiredness. Weapon and a bag with Chia seeds were main things the Aztec warriors took for their marches.
It had been so during many centuries, until the conquerors headed by Cortes came to Mexico in 1519 and began the cruel enslavement of the legendary Aztec Empire. Within two years the Aztec nation was almost totally eliminated, the state was plundered and turned to ruins, the Chia plantations were totally burnt. So Chia was forgotten for 500 years, until some little fields with Chia that survived by a miracle were found as result of a special program in mountain regions of difficult access in Mexico and Guatemala. In 1991 they began selection works on the Chia investigation and development, and the first experimental fields were planted in Argentina by the brothers Alfredo and Adolfo Mill. As a result of 15 years of selection Chia has returned to life revived under the name of Salba, with the highest quality of seeds. By the way, Salba is the only type of Salvia Hispanica, which had clinical researches.

Description.
Chia (Salvia hispanica L.) is the annual grass crop, 1-1,5 m high, of Labiatae family. The name of new selective type is Salba (white Chia).
Flowers are of white to violet color. The seeds are white, grey, brown and their mixture, oval, to 1 mm, smooth, bright, covered with firm seed-coat that protects them in the conditions of dry and hot climate where Chia is cultivated. The areal of Chia are the regions in the north of South America and in Mexico, 1200-2500 m over the sea level.

Properties.
Chia seeds are the nutritious and ecologically pure product, proved during more than 4000 years! Modern scientists have concluded that diets before Columbus based on Chia are much better than the best modern diets
Chia seeds have the highest percent content of proteins from 19 to 23% of Chia seeds weight is the high quality vegetable protein. For comparison here are the % contents of proteins in other plants grain: wheat and corn 14%, rice 8,5%, oak 15,3%, barley 9,2%, amaranth 14,8%. Chia contains 3/-10 times more oils than any other grains or plants from 32 to 39%, with the highest level of polyunsaturated fat acids (PUFA) type Omega-3 and is the best natural source of essential acids Omega-3. The content of PUFA Omega-3 in Chia oil reaches 64%! For comparison: in sunflower oil 0,3%, olive oil 1,5%, soy oil 8%, cod liver to 20%, in some algae to 40%, in salmon caviar to 35%. And the Omega-3 acids in Chia have incomparable stability (they don't oxidize even after many years of storing in usual (!) conditions) due to the high content of active natural antioxidants in Chia, such as caffeine and chlorogenic acids, miricetine, campfires and flavones that efficiently protect the human body of cardiovascular diseases, cancer of lungs and stomach, thrombus embolisms (due to the anticoagulation effect). Natural antioxidants of Chia prevent aging and damaging of the body tissues and, therefore, the genesis of diseases (cancer tumors, cardiovascular diseases, cerebral thrombosis, arthritis, etc.
Omega-3 acids are essential for human body, it means they are not produced in the organism and shall come from without. They are necessary for metabolism of fat soluble vitamins, such as A, D, E and K, they are the most important metabolites for the cell respiration and energetic supply to cells, nerves and mucous membranes.
Chia is the excellent supplier of calcium, necessary for normal development and functioning of the osseous and muscular system of children, sportsmen, for the osteoporosis prevention and treatment of its effects, first of all in women in the climax period, etc. 100 g of Chia contain to 870 mg of calcium, and milk contains not more than 125 mg.
